Cocoa Coconut Almond Muffins

I was craving a little sweetness the other day and so after a little experimentation in the kitchen I came up with these delicious Cocoa Coconut Almond Muffins! They are dairy free, gluten free and sugar free (except for a few chocolate chips).

This is a dual-purpose recipe; use for snacks, a mid afternoon treat-something you definitely need in your recipe repertoire. The coconut oil will help keep you feeling full and satisfied -helping to prevent unnecessary snacking.

Consider starting your meal with one of my absolute favs: Boston Lettuce, Peach and Ricotta Salad and complete with this beauty of a muffin.

Ingredients for Muffins

1/2 cup Coconut Flour

1 Cup Almond Flour

1/3 cup unsweetened apple sauce

1/4 cup raw cocoa powder

2 eggs

1/4 cup melted coconut oil

1/4 cup cashew, coconut or almond milk (my fav brand is Earths Own Cashew Fresh …Unsweetened of course)

2tbsp raw honey

1/3 cup mini chocolate chips (my fav brand is Enjoy Life)

2 tsp vanilla extract

1tsp baking powder

pinch of salt

Directions for Muffins

  • Mix all ingredients together in one bowl until combined well.
  • Recipe makes 12 muffins so divide batter equally into 12 paper muffin liners and bake at 350 for 25 minutes.Enjoy!
