As a nutritionist I’m always getting asked for healthier versions of classic dishes that people can bring to parties and gatherings. This cabbage slaw recipe below checks off all boxes:
- It’s yummy (a must for sure!)
- It’s crunchy- and in a carb free world these days, crunch is at a premium
- It’s full of fibre and nutrients to help keep our immune systems optimized
- It’s made of simple ingredients we all have at home
The health benefits of cabbage are undeniable. From it’s cholesterol lowering properties to its cancer fighting functions, cabbage can be eaten cooked or raw… but personally I find raw is nicer.
Do you get bloated from cabbage? If this sounds familiar than be rest assured that the apple cider vinegar in this recipe not only gives the cabbage a tangy taste but also helps with digestion. Ensure you chew well (you know who you are) and if needed, use digestive enzymes to help break this meal down a bit better.
Ingredients for Crunch Almond Cabbage Slaw
1 head shredded Savoy cabbage (you could add in some red cabbage as well if you like for colour)
1 shredded large carrot
1 tbsp grainy mustard
2 cups Plain Greek yogurt
1/4 cup apple cider vinegar
1/4 cup pure maple syrup
2 tbsp minced dried onion
1/4 cup slivered almonds
pepper and sea salt to taste
Shred cabbage and carrots into a large mixing bowl
Combine remaining ingredients into a small bowl and blend.
Top dressing over cabbage and mix thoroughly
