Creamy Cactus Ice Cream

Ice cream for breakfast anyone?

Now that I have caught your attention! It might be winter here in Canada, but there’s no reason why we can’t enjoy this creamy (dairy free) cactus ice cream. The smooth texture and fruity flavours make this healthy, yet satisfying treat a perfect snack, dessert or breakfast option. Yes! You read that correctly, I do at times enjoy this for breakfast. Why not right? It has all the food groups- protein, carbs and fats- making it a perfect meal choice…now just to find a way to sneak kale into this recipe!

I happened upon this recipe one day. I was making a smoothie bowl and didn’t add enough cashew milk. Lucky for me otherwise I might not have stumbled upon this yummy gem.

Ingredients for Ice Cream

1/4 ripe avocado

1 scoop protein powder

1/4 cup dragon fruit, peeled

1/2 frozen banana

1/4 cup unsweetened cashew milk

1 cup berries

Directions

In a high powered blender combine all ingredients

I use my vitamix masher to push ingredients down until everything is well combined and has formed a thick ice cream-like substance.

Enjoy and top with any of the following ingredients (I like crunchy options):

  • cashews
  • sunflower or pumpkin seeds
  • unsweetened coconut
  • chunks of dragon fruit (cactus)
  • pomegranates
  • granola
