Move over flour, there is a new black bean hero in town! This recipe for black bean brownies is naturally gluten free, packed with fiber and healthy fat and are a MUCH healthier alternative to regular brownies. Nobody will ever guess that they contain black beans, avocado, and apple sauce in replace of sugar, butter, and oils!
This recipe is proof that healthy eating does not have to mean saying goodbye to all of your old favourites. Getting creative and having a bit of fun with standard recipes is the key to making them work for you!
- 1 (15-ounce) can no-salt-added black beans, drained and rinsed
- 3 large eggs
- 1/3 cup mashed avocado
- 2 tbsp of chia seeds
- 1/4 cup cocoa powder
- 1/8 teaspoon salt
- 2 teaspoon vanilla extract
- 1/2 cup apple sauce
- 1/8 tsp sea salt
- 1/2 cup semi-sweet chocolate chips or co – the darker the better!
- 1/3 cup finely chopped walnuts (optional)
Preheat oven to 350°F. Butter an 8-inch baking pan. Place the black beans, eggs, avocado, chia seeds, cocoa powder, salt, vanilla, and apple sauce in the bowl of a food processor and blend until smooth. Remove the blade and carefully stir in the chocolate chips and walnuts. Transfer mixture to the prepared pan. Bake the brownies for 30 to 35 minutes, or until just set in the center. Cool before cutting into squares.
