Healthy Pineapple Onion Salsa

The summer is the PERFECT time to enjoy lighter, more refreshing dishes…and my Pineapple Onion Salsa hits the spot on taste and the refreshing-factor!

This simple and super healthy condiment takes minutes to prepare and can be used in a variety of ways. Most recently I piled over top cooked organic salmon and paired with a no-fuss green leaf and pickled cucumber salad.

Here are a few other ways to enjoy this amazing dish:

  • Mixed into traditional salsa for an added ZING!
  • Added to mashed up guacamole for a sweeter version your friends will love
  • Use on its own as a salsa- consider adding green scallions for a pop of colour
  • Topped over your favourite green leafy salad or entrée.

Ingredients for the Healthy Pineapple Salsa:

1 cup finely diced pineapple

1tbsp olive oil

1.5 tbsp finely diced red onion

sea salt and pepper to taste

Directions:

Add all ingredients into a small bowl and toss evenly.

Add to your favourite dish and enjoy!
