Ahhh yes, I’m just imagining lounging on a warm beach with the waves lapping against the sand nearby. I’m picturing fresh tropical fruit like mango, grapefruit and pineapple in abundance, plenty of cozy afternoon naps under an umbrella and a pile of books to get lost in…except it’s February in Toronto…wamp, wamp, wamp.
I like many of you, dream of warmer weather, but more specifically, dream of warm tropical weather and all the delicious foods that come along with sunny beach vacations. So this past weekend I decided to concoct my own tropical drink SANS the extra sugar and booze. Now, don’t get my wrong, I’m not opposed to a glass of wine or two, but on a Saturday afternoon, I’m going virgin and supporting my love of health & happiness. Ingredients for Grapefruit Cactus Mocktail:
1/4 cup grapefruit juice
1.5 cups grapefruit Perrier
juice of 1/4 of fresh lime
1/4 of a dragon fruit (mash 1/2 of this with a fork and cube the other half)
Muddle or mash 1/2 the portion of dragon fruit. Add this to a fancy glass.
Add the juice, perrier, lime and ice and stir.
Cube the remaining dragon fruit and add as a garnish.
