I am LOVING this soup! There is nothing that makes me more happy then quick, yet healthy meal ideas for my busy week.
Among being such a versatile veggie, cauliflower is apart of the cruciferious vegetable family, it is a fibre and antioxidant powerhouse while also containing an important compound called Indole 3 Carbinol (I3C). “Cruciferous vegetables differ from other classes of vegetables in that they are rich sources of sulfur-containing compounds known as glucosinolates – some studies provide some evidence that diets rich in cruciferous vegetables are associated with lower risk of several types of cancer.”*
So eat up and ENJOY!
Ingredients for Cauliflower Soup:
- 1 head of cauliflower
- 2 garlic cloves
- 1 onion diced
- 4 cups of organic vegetable broth
- 1 cup of water
- 1 tsp sea salt
- freshly ground pepper to taste
- 1/2 tbsp grape seed oil
- 3tbsp hemp seeds (per serving)
Makes 5-6 servings
Add oil and onions to a pot and let caramelize. The longer the better, this is flavour country!
Add all ingredients and bring to a boil and simmer until cauliflower is fork tender.
Using an immersion blender, puree ingredients until desired consistency.
Add 3tbsp hemp to each serving once ready to serve.
Note: if you are reheating, add hemp after you have heated the soup up.
